Rated 5 out of 5 from 1 rating

These fudgy Sweet Potato Brownies are a healthier twist on classic chocolate brownies, made with roasted sweet potato, cacao powder, oat flour and dark chocolate chips. Naturally moist, rich and chocolatey, they’re easy to make and perfect for a healthier dessert, snack or chocolate craving. Made without refined flour and naturally gluten-free when using certified gluten-free oats.

Healthy Sweet Potato Brownies

Ingredients

  • 250g roasted sweet potato
  • 3 eggs
  • 120g maple syrup
  • 20g coconut sugar
  • 1 tsp vanilla extract
  • 30g cacao powder
  • 40g oat flour
  • 1 tsp baking soda
  • 100g dark chocolate chips

Method

  1. Preheat the oven to 175°C / 350°F and line an 8-inch square baking tin with baking paper.
  2. Add the mashed sweet potato to a large bowl and whisk in the eggs, maple syrup, coconut sugar and vanilla until smooth.
  3. Add the cacao powder, oat flour and baking soda and fold until just combined.
  4. Fold through most of the chocolate chips, reserving a few for the top.
  5. Pour into the lined tin, smooth the surface and scatter over the remaining chocolate chips.
  6. Bake for about 35 minutes. They should still look slightly underdone in the centre when you take them out — this helps keep them fudgy.
