Ingredients
- 2 medium sweet potatoes (around 250g each)
- 1 tsp olive oil
- Pinch of sea salt
- 250g chicken mince
- 1 tbsp olive oil
- ½ tsp garlic granules
- 1 tsp smoked paprika
- 1 tsp ground cumin
- ½ tsp chilli powder (optional)
- Salt and black pepper, to taste
- Splash of water
- 50g mature Cheddar, grated
- 1 ripe avocado
- Juice of ½ lime
- 100g tomatoes, finely chopped
- Small handful of fresh coriander, chopped
Method
- Roast the sweet potatoes: Preheat the oven to 200°C (180°C fan). Slice the sweet potatoes in half lengthways and rub the cut sides with olive oil and a pinch of salt. Place cut-side down on a lined baking tray and roast for 30–35 minutes, until tender and caramelised around the edges.
- Cook the chicken mince: Meanwhile, heat the olive oil in a frying pan over medium-high heat. Add the chicken mince and cook for 5–7 minutes, breaking it up with a wooden spoon until lightly golden.
- Add the flavour: Stir in the garlic granules, smoked paprika, cumin and chilli powder. Add a small splash of water and cook for another 2–3 minutes, until the chicken is fully cooked and coated in the spices. Season with salt and black pepper.
- Prepare the toppings: Mash the avocado with lime juice and a pinch of salt. Finely chop the tomatoes and coriander.
- Load the potatoes: Once the sweet potatoes are tender, turn them cut-side up and gently fluff the flesh with a fork. Spoon the spiced chicken mince evenly over all four halves, then sprinkle with grated Cheddar.
- Melt the cheese: Return to the oven for 2–3 minutes, until the cheese has melted.
- Finish and serve: Top with mashed avocado, fresh tomatoes, chopped coriander and a sprinkle of chilli flakes, if you like. Serve immediately!
