- 1 medium carrot, julienned or grated
- 100g red cabbage, finely shredded
- 80g edamame

- 2 tbsp gochujang paste
- 1 tbsp sesame oil
- 1 tbsp Tamari
- 1 tbsp rice vinegar

- Heat the olive oil in a large frying pan over a medium heat. Add the torn tempeh and cook for 5–6 minutes, turning occasionally, until golden and crispy.
- Add the cooled noodles, cucumber, carrot, red cabbage, edamame, spring onions, chopped coriander, crispy golden tempeh and sesame seeds to a large bowl.
- Pour over the dressing and toss everything together until evenly coated.
- Divide the salad between two bowls and serve sprinkled with extra sesame seeds and an extra squeeze of fresh lime.
